Old Pilot’s Gin – Barrel Aged Gin is our award winning gin rested in first fill Croatian and American oak barrels. Botanical ratios are slightly changed but we still use 6 Croatian handpicked botanicals from Mediterranean and continental part of Croatia. After distillation gin in rested in five different barrels. They differ by volume, type of oak, toasting/charring levels, preparation, … each giving its own signature and complexity to the final spirit.
American oak gives us sweetness, vanilla and smokiness at the back while Croatian oak builds pleasant bitterness and dry fruit.
Barrel Aged Old Pilot’s Gin is perfect in cocktails usually mixed with whiskey as border between whiskey and gin fades away.
Try it neat in rosemary smoked glass.
Full process from preparation, distillation, maturation, bottling, labelling and wax sealing is done by hand. Every bottle is unique and special.
